Apple Cinnamon Loaf
We have busy mornings between getting ourselves ready, the dogs fed, and getting our toddler fed and out the door on time. More often than I’d like to admit, we rely on cereal for a quick breakfast option to cut down on the time it takes us to get ready. Another option that helps us stay on time is a healthy loaf option that I can just slice and butter for a quick car breakfast.
This applesauce bread recipe is delicious, moist, low sugar, and uses very simple ingredients. The notes of cinnamon and nutmeg are so full of fall flavours which makes this a perfect snack to get into the autumn mood while sipping on a cup of hot tea in the brisk fall morning (if you have the time, that is).
HOW TO MAKE THE LOAF MOIST
Applesauce plays a huge part in keeping this bread moist and lends to the fall flavours.
Do not over mix the batter. When you overmix, you exhaust the batter and it tends to be a drier bread.
CAN I MAKE IT HEALTHIER?
This loaf is already a pretty healthy and light snack, but if you’re looking to improve it even more you can try:
Replacing ¾ of the all-purpose flour with whole wheat flower
Use a heart-healthy oil like olive or coconut.
Use unsweetened applesauce to reduce the sugars
Or, use sweetened applesauce but reduce the granulated sugar.
If you want it to be sugar free, swap out granulated sugar for monk fruit sugar.
Ingredients
fall spices: cinnamon, nutmeg, ginger. Or you can use 1.5 tsp pumpkin spice.
oil of choice: vegetable oil is a great option because of its mild flavour, but olive or coconut are great substitutes
granulated and brown sugar
eggs
milk
baking soda and baking powder
apple sauce (try my super easy recipe here)
optional: toppings and mixins
DRESS IT UP
Need this bread to have a little more oomph? Try adding about ¾ cup of mix-ins:
Walnuts or pecans
Raisins
Mini chocolate chips
Chunks of dried fruit
Chopped up apples like Granny Smith or Fuji
** You can also turn this loaf into muffins by reducing the baking time to about 30 minutes.
